“Chef Kate” brings passion and experience into the Remington College kitchen and classrooms
Remington College is pleased to welcome Kate Schroeder as its new department chair for the Remington College – Dallas Campus Pastry Arts Diploma Program.
Known on campus as Chef Kate, Schroeder mixes her real-world experience and passion for the pastry arts into a recipe for success for her students.
Schroeder can relate to her students, as she was once a Culinary Arts student herself. She also worked as a pastry chef at several restaurants and managed a retail bakery. She was an instructor in the Remington College Culinary Arts program before taking over as department chair.
Chef Kate says she loves sharing her skills with her students, and she picks up some tips from them as well.
“With every new class I teach, I learn from my students as much as they learn from me,” said Chef Kate. “The wonderful thing about the culinary field is that people from all walks of life can be successful as long as they work hard and can be creative – and our students have proven that they can!”
Much of that success has come from baking and confection competitions. Remington College Pastry Arts students have racked up more than a baker’s dozen awards in culinary competitions throughout Texas, competing against professional chefs, restaurant owners, and other pastry pros.
The Pastry Arts diploma program, which can be completed in as few as nine months, is designed to help people turn their taste for baking into a fun and challenging potential career.
Students enter the program with a variety of skill levels.
“We have students who are already cake decorators and want to learn all aspects of baking,” said Chef Kate. “And we have students who have never made a cookie before!”
Classes focus on practical skills and hands-on experience and include:
- Introduction to Pastry Arts
- Baking Methodology
- Artisan Breads and Rolls
- Cakes and Icing
- Cookies and Tarts
- Confectionary Art
- Restaurant Desserts
